This is probably the first guide that I've read that makes me think I miiiight get into canning! Very detailed and safety-orientated, thank you! At the moment I put our stewed apples, plums, and tomatoes in the freezer. The thing is currently jam-packed! But it will give us a year's worth of apple/plum on our morning porridge 😋

Re: fluffy apples. I cook and freeze apples now I have quite a lot of freezer space. My hack if you have fluffy apples is to mix with a better apple. I've got some kind of green apple that is lovely and tart but looses form when cooked so I use equal parts Ryal Gala (I'm pretty sure?). If you generate more juice just pour it off and cook the next batch in that juice.
